Chester's Chicken Wings

Easy to make, and a garlic-lover's delight!

  • 2 lbs. chicken wings
For the marinade:
  • One-half head garlic, about 8 to 12 cloves
  • 1 Tab oregano
  • 1 Tab paprika
  • 1 Tab oil
  • 2 Tab water, beer, milk, or cream
  • Salt and pepper to taste

Cut the wings apart at the "elbow". Cut off and discard wing tips.

Peel the garlic cloves and squeeze through a garlic press (or process
in a small food processor.)

Add remaining marinade ingredients and mix well (or process in food
processor).

Lightly grease a baking pan and fit the chicken pieces in one layer,
either snugly or loosely.

Dump and loosely spread the seasoning mixture on top. Pick up each
piece of chicken and spread the seasoning on all sides and replace in pan.

(May be made ahead to this point. Store, covered, in the fridge.)

Preheat oven to 400º.

Sprinkle more paprika over the chicken. Bake, uncovered, until the
chicken is nicely browned and tests done inside--about 30 min.

Made by Jim for the March 2005 potluck.
