Creamy Chocolate Pie
Anyone tasting this luscious pie will think they're eating
lots of calories and fat. Just don't mention the
secret ingredient: tofu!
Filling:
- 10 oz. chocolate chips or carob chips
- 2 packages (10.5 oz each) firm tofu
(I use Mori-Nu Silken Tofu)
3 Tbsps. light honey
Pie Crust:
- 9" graham cracker or cookie pie crust
Gently melt the chocolate chips using your favorite method, such as
- in a double boiler
- in a pan sitting in water
- in a sauce pan over very low heat
- in a bowl in the microwave
Stir until smooth. Add honey.
In a blender or processor blend tofu until smooth.
Add the chocolate/honey mixture to tofu and whip until creamy.
Pour filling into pie crust.
Chill overnight.
Slice and serve
