Szechwan Green Beans
Yield: 4 main-dish servings; 6 side dish servings;
6 to 8 servings for appetizer or snack.
Preparation time: 15 minutes

- 4 Tablespoons Chinese toasted sesame oil
- 2 pounds fresh green beans, washed and trimmed
- 8 cloves garlic, minced
- 1/2 teaspoon salt
- crushed red pepper, to taste (optional)
Place a medium-large wok or heavy deep skillet or pot
over medium-high heat. After a minute, add the oil.
Wait a minute or so, and add the green beans.
Turn the heat to high and stir-fry for about 5 minutes,
or until the beans are well seared.
Add garlic and salt (and optional crushed red pepper).
Stir-fry for several more minutes, then remove from heat.
Serve hot, warm, or at room temperature.
