Mango Salsa
A sweet, tropical, mango fresh-fruit salsa. Make it
as hot or as mild as you like. From a recipe in the Star-Tribune
- 1 mango, peeled, seeded, and diced (about 1 cup)
- 1/2 large bell pepper, seeded and chopped
- 1/4 cup minced red onion (or Vidalia or other sweet onion)
- fresh chile pepper, seeded and minced, to taste
- 2 cloves garlic, minced (or to taste)
- 3 Tab lime juice
- 1 Tab oil
- 1 Tab chopped fresh cilantro
- salt and pepper to taste
Combine all ingredients in a medium bowl.
Let stand at room temperature 30 minutes, or
refrigerate for up to several hours before serving.
Serve with tortilla chips for dipping, or
as a condiment for grilled summer dishes.
