Potluck Recipe

Mango Salsa

A sweet, tropical, mango fresh-fruit salsa. Make it
as hot or as mild as you like. From a recipe in the Star-Tribune

  • 1 mango, peeled, seeded, and diced (about 1 cup)
  • 1/2 large bell pepper, seeded and chopped
  • 1/4 cup minced red onion (or Vidalia or other sweet onion)
  • fresh chile pepper, seeded and minced, to taste
  • 2 cloves garlic, minced (or to taste)
  • 3 Tab lime juice
  • 1 Tab oil
  • 1 Tab chopped fresh cilantro
  • salt and pepper to taste

Combine all ingredients in a medium bowl.
Let stand at room temperature 30 minutes, or
refrigerate for up to several hours before serving.

Serve with tortilla chips for dipping, or
as a condiment for grilled summer dishes.

Made by Jim for the August 2001 pizza party.
