Butternut Squash Hotdish

with Craisins and Nuts

All the quantities can be adjusted to your personal taste.

  • 1 medium butternut squash
  • 1/2 to 1 stick of butter or margarine
    (I used a mix of butter and Brown and Brummels yogurt whip)
  • 1/2 cup brown sugar or maple syrup
  • 1 1/2 to 2 tsp cinnamon
  • 1/4 to 1/2 tsp clove
  • 1/4 to 1/2 tsp nutmeg
  • Pepper and salt to taste
  • 1/2 cup walnut or pecan pieces
  • 1/2 cup craisins

Bake the squash in a 350 degree oven, 30-45 minutes, or
microwave squash until soft and fully cooked.

Scoop squash out of skin. Discard skin.

Mash cooked squash in a bowl.

Beat in butter, syrup or sugar, spices, salt, and pepper,
til butter melts and squash is consistency of mashed potatoes.

Put the mixture in a serving bowl and sprinkle nuts and craisins on top.

Can be covered and stored in refrigerator and reheated before serving.
